If there’s one thing my entire family loves to eat for dinner, it’s salmon. My sons like it baked with rice and green beans, my daughter and I will eat it any way it comes — but we love these two things in sushi.

A few weeks ago she sent me this recipe that looked amazing on TikTok: A salmon and rice bowl with hot sauce and veggies, but the kicker is… you eat it with little squares of seaweed.

There are a few ways to incorporate the seaweed, but we will get to that later.

First, let’s talk about the main character of this dish — and no, it’s not the salmon, it’s the seaweed squares, trust me.

My kids turned me onto these about a year ago. We brought some home from the grocery store and I couldn’t believe how good they were. The kind we get are toasted in sesame oil and salted. They are literally the perfect PMS snack for me and they are great thrown over all kinds of dishes like salads, stir fries, and seafood.

Even my son likes them, and let’s just say when it comes to fruit and vegetables, he usually passes. I’ll take the fact that he likes this seaweed so much as a win.

The truth is, as soon as I get these snacks in the house they are gone that day. So, when I saw the recipe and went to the grocery store I only saw two packets in the aisle where there are usually three full rows of these bad boys.

I tried another store and they were sold out.

I literally couldn’t find the seaweed anywhere, and for so long I was led to believe me and my kids were the only people in our area who ate this stuff.

Well, it turns out this recipe went viral on TikTok after it was posted on September 21st of this year.

Since then, it’s been viewed over 45 million times, and Instacart reports orders containing seaweed and salmon have grown by one-hundred percent since September 29th so yeah, we aren’t the only ones.

“Salmon and dried seaweed are not historically a common pairing on Instacart, so there’s no question the recent growth of these two items is a direct result of this latest TikTok trend,” said Instacart trends expert Laurentia Romaniuk. “As a quick, easy and balanced recipe, it’s clear to see why it’s become so immensely popular.”

We were determined to try this, so I came home with my two little packets of seaweed (that I was very thankful to get my hands on) and we made it.

There are a lot of variations with this recipe, which is why I love it. You make some rice, add your cooked salmon, hot sauce if you want (I used wasabi instead), soy sauce, and any veggies you’d like. We used red peppers, cucumbers, and avocado, and Everything But The Bagel seasoning.

The fun part is after you have your bowl constructed, you put down a piece of seaweed and scoop it up with chopsticks. It’s kind of like having homemade sushi without having to roll and cut it into pieces.

My kids decided it was more fun to make mini sushi tacos, so they put their squares of seaweed flat into their hands, added some ingredients from their bowl, and folded it in half.

You could also crunch up a bunch of seaweed pieces on top of your bowl and eat it like that.

It doesn’t matter — you can’t go wrong with this.

Even if you aren’t a fan of sushi, but you like rice and salmon, I’d give it a try. The salmon is cooked, and adding the seaweed gives it a crunchy, salty flavor that is so good.

Just be prepared to possibly shop around a bit for your seaweed and salmon. I had no idea everyone was onto this seaweed and salmon trend before we were, so I like to be ready now. Whenever I see seaweed at the store, I pick some up so we always have a stash to make our new favorite dinner.

But don’t worry, I’ll leave some for you.
